This moment. Right now. I am back.
I have my gym membership renewed, only 2 exams left, and summer is a week away!
To update on everything, I’ve almost just barely survived junior year. I have an internship at a hospital in Boston for 8 weeks this summer and I’m going to New Orleans on a community service trip for two. That eats up practically my entire summer. I will also be spending a week driving down the coast with my dad to visit colleges.
I’m also very excited because one of my best friends comes home tomorrow! She has been studying abroad in Italy for the past year and it has been extremely hard here without her.
So with my hour and a half commute to Boston via trains, the subway, buses and my own two feet, I will have tons of time to post to tumblr(:
I’m so excited to be back here and my summer body back. And keep it this time!
Just need to survive the end of the school year.

2 small pancakes
half english muffin with a poached egg and slice of canadian bacon
fruit salad (yummy yummy! ohh gotta love the wiggles)

Raw Zucchini Sushi RollsFrom For the Love of Food
4 servings
1/2 cup cashews, soaked overnight
1 Tablespoon rice vinegar
3 - 4 zucchini (each yields 6 - 8 slices)
2 carrots, sliced into matchsticks
1 cucumber, seeds removed and sliced into matchsticks
4 medium radishes, sliced
1 avocado, peeled and sliced
1 small bunch cilantro
Drain cashews and put into food processor with rice vinegar. (Depending on how long cashews were soaked you might need to add a tablespoon of water to get the right consistency.) Process, scraping sides with spatula if necessary, until cashews are a soft paste but still have some texture.
Chop the ends off of your zucchini and use a vegetable peeler to peel your zucchini into long thin strips. Lay zucchini strip flat and add a small spoonful of cashew mixture onto one of the ends of zucchini. Add a few matchsticks of veggies, avocado, and a couple of pieces of cilantro. Roll up and enjoy!ohmygod this is so pretty im gonna try it tomorrow
